Just wondering if anyone here is Gluten Intolerant or has Celiac Disease. Anyone eat a Gluten Free diet?  :lobster:

We don't eat totally gluten free but have managed to reduce our gluten intake by at least half....
Is this something you have to do or something you are considering doing?

Yeah, I am gluten free. Just wondering if I was the only one here. smiley Maybe it is just us two! What is prompting you guys to reduce your gluten?

Health reasons...I guess I try to avoid it mainly because too much of it isn't good for you and it has a high GI which means the more you eat of it the higher your caloric intake and the more weight you gain. So I guess you could say I do it to maintain a healthy weight..not an allergy. But once you start looking at what products contain gluten it frightening and would be very hard to "eat" totally gluten free! Although there are more and more products comingout that are gluten free! Which makes it easier for those out there that live with Celiac disease!
Do you use a lot of spelt products? It has some gluten (different than wheat gluten) and I found it's the easiest to make bread with.

No, I can't eat spelt. I have Celiac Disease, and it has the kind of wheat (since it is "form" of wheat) gluten in it that I can not have. And yes, eating totally gluten free is a challenge, but not that bad. Been GF for 2 years now. I eat so much better overall, not just because of the Celiac Disease, but like you said, most things containing Wheat (and gluten-Barley, Rye, some Oats) are just full of fried/sugar/fat/yuckiness.

That is amazing that you do it for health reasons. I don't know if I could stick to it if I didnt get REALLY sick when I ate gluten-containing foods!  :gah:

Wow...you are really restricted! I feel for you! It must of been a hard change initially! I know a gal that not only has celiac diease but is also got an allery to corn! I really don't know what she eats?
I'm glad to hear you've done so well at adjusting and changing! You are remarkable! Change is never easy especially if you don't have a choice!

Yeah, but for me, I can see some serious health changes when I have gluten and when I don't. What about you? Have you noticed changes? Have you ever been tested for Celiac Disease? If you are near Austin, this event is doing free, on-site screening www.GotGut5k.com !!

I can't say that I really notice any difference in my gut...but I do have more energy and ahhmm I am more regular... :whstl:

I lost weight almost 20lbs since I reduced my gluten intake! Now I just have to wait to get this darn cast off my leg and increase my exercise!

I've not every been tested I doubt I have celiac...I don't have many of the symptoms...for me it's more of a lifestyle choice and I like that I lost a ton of weight after making this choice! Did you find that you lost weight too?

The event in Austin sounds really interesting but I'm a long way away from there! North east is home to me!

I love the name Austin..I named my first son Austin! :biggrin:

My Father-in-law has/had Celiac Disease.  After eating gluten free for 2 years, he was retested and the Dr said he no longer has Celiac Disease.  I've never heard of this happening before.  He still watches his gluten and tries to avoid it. 

I love spelt flour for making bread.

Girl, please please please understand my PERSONAL feeling about this; HIS DOCTOR IS EFFING-WRONG!!!!! Celiac Disease DOES NOT go away! You can reduce the syomptoms, and get down to "0" on the antibody tests, but it is GENETIC and you can not change your genes!!!! If you stop eating it, your body will stop producing the antibody, but that does not mean that you are "allergic"! Know what I mean? I am allergic to cats, but just because I am not around a cat right now, so I am not sneezing and coughing, does not mean I am no longer allergic to cats!!! My uncle's doc told him the same thing over 10 years ago, and it pisses me off to no end!!! I am SOOOOO glad that you said he is still avoiding gluten. Idiot docs like that should have their medical lisences taken away.

Phew, ok, calming down.....

As far as websites, here are my favs:
www.Celiac.com (but the board is a little weird, kinda snippity over there.....)
www.GlutenFreeGirl.com (This is a blog by a girl who has great recipes)
www.MakeMineGlutenFree.wordpress.com (Blog for eating out Gluten Free)
There are tons of recipes, if you google "gluten free recipe" and also lots of books. I like Carol Fenster's books, and Jaqueline Mallorca "The Wheat Free Cook" books. Most recipes are easy to convert to gluten free too, by subbing the flours or thickeners.... smiley

That's what I thought too.  But I'm not arguing with the inlaws any more than I have to.  LOL 
And since it is genetic, I worry that DH might have it show up one day or our future kids might have it.  So far DH hasn't had any problems, that I'm aware of.  His Father wasn't diagnosed/undiagnosed until a few years ago.

The test is a real simple blood panel, one stick. If you can con him into going to the doc for the one stick, then you are done. And MAKE SURE you get a copy of the results. As you can see, there are a lot of stupid docs. The results will give you lab values, and you can see that (for example) >20 is positive. Some docs will say that a 21 is barely positive. NO, it is positive, don't BS people!!! Mine was only 11, but I was full of symptoms that went away as soon as I went GF, so I don't understand people not going GF when they are over 20, you know? You never know how much better you might fell unless you TRY IT!!!

They have rolled and steel cut.  The newsletter featured a gluten free oatmeal cookie recipe using their oats.  I can post it, if you want.
