Over in the "what for dinner" thread we talked about tofu pudding.  I make it and love it.  But I'm wondering if anyone has made it and frozen it?  Does freezing and thawing make it taste/feel weird?

I haven't tried that....are you asking cause you tried it and it tasted weird or because you would like to try it?

I think it would be neat to freeze it and then put is in the food processor and make an ice cream sort of desert....hmm I may have to try this!

Thanks Sassy.  I'll probably try it this weekend too.  So we can both report. 

What recipe do you use?  One with melted chocolate or cocoa powder?  I've done both and I like the cocoa powder best.  It seemed to mix better.  What do you use for sweetner?  I usually use splenda but might try something natural.

I usually use unsweetened carob chips (melted) and then I use maple syrup as a sweetener....I'm totally against artificial stuff...but I'm sure you've listened to many of my anti-artifical sweetener rants before! :teehee:

I've been meaning to try a tofu whip with fruit...I guess I'll really have to make sure I strain the tofu well if I do that. Do you strain your tofu?

Yes, I strain my tofu.  I don't press it, just dump the water off.

I know if you freeze tofu as is it gets a chewier texture, denser.

Don't know what will happen if you freeze the pudding and eager to know. I'm guessing it might separate a little.

I'll have to find my recipe and post it in the recipe section for the heck of it.

Okay....I tried freezing the tofu whip (and I press my tofu because it makes the pudding more like a mousse) and it was okay...but not fantastic....it became a bit icy, not nearly as creamy as it is just in the fridge.

I even went all out and bought some dark chocolate to use in place of the carob chips.....

I won't be freezing it again unless I was making popsicles for the kids...that would probably work better.

Okay Ginger I made the tofu whip with frozen cherries instead and it turned out fantastic!

A few minor modifications were necessary though:

The Silken tofu needed to be drained and pressed well! Cherries I thawed, strained and set the juice aside.

Then I first whipped the cherries in the food processor followed by the tofu. I then added a tiny pinch of sea salt and a teaspoon of maple syrup.

We like our whip very thick at our house, if you wanted it thinner you could then add more of the cherry juice...I drank mine :teehee: it was good!  :biggrin:

We'll see what the family thinks tonight!

Sassy,  that sounds good.  Let me know what your family thinks.
I forgot to post but I tried my frozen tofu.  It was ok in a frozen state, like ice cream.  Thawed out it was not good.

RTP, Don't knock it til you've tried it! It's pretty darn tasty! :thumbup:

Ginger, My kids really liked it! They thought it was chocolate cherry because it tasted like the "other kind" LOL, talk about conditioning! They were actually tasting the tofu part and thinking it was like chocolate! Love that!

Hubby's portion is still in the fridge....he said he wasn't hungry....he's harder to fool! lol!
