The tortilla pizzas are one of my not-so-original creations. I use two tortillas on top of each other, "glued" together with a little cheese. Then make my own pizza sauce quickly with tomato paste and spices. Top as usual and I bake it in my toaster over. Yummy!

As for green taco sauce, you need tomatillos. I don't have a recipe, but I do have a recipe for enchilada sauce made with tomatillos. You could start with it as a base and jazz it up.

I found a great recipe for green enchilada sauce and I've tried it too! It's one of my favorites!http://www.mex-recipes.com/green-enchilada-sauce-recipe.html

I used green tomatoes from my garden as tomatilos are hard to come by in Canada....

Okay tonights dinner is going to be lamb burgers, ground lamb seasoned with onions, garlic and a touch of fresh rosemary, topped with lettece tomatoes and feta cheese....not sure yet what the side will be...maybe progies or maybe just burgers with no side....

BTW, I really love the ideas posted here! This weekend we will be trying the mexican pizza's!

I looked for ground lamb in my store tonight and didn't find any. I don't recall ever seeing ground lamb at any of our local stores. Hmmmmmmmmmmmmmm. Is it expensive?

WWIT...look in the freezer section. Sometimes stores don't carry it in the fresh meat case because there isn't enough demand for it or whatever but they do in the freezer section.

I can't remember what the per pound cost was the last time I bought it. It isn't prohibitively expensive though.

Once every other year I buy a half a lamb (organic, no antibotics..etc.) It costs me about $120.00CD...I don't like the mutton they call lamb from New Zeland....(Yes I know I'm a bit of a princess when it comes to food..but I firmly believe in the saying you are what you eat) giggle

We had the mexican tortilla pizza's tonight! They were a big hit and really easy quick meal too! Thanks for posting those! Looking forward to reading more posts about "What's for dinner"!

Dinner tonight is leftover BBQ chuck roast.

If you've never tried cooking a chuck roast on the grill, you really should try it. Make sure you get a choice grade boneless chuck roast. They have them on sale every so often.

You obviously have to cook it longer per side than a steak because it is bigger and thicker. I think we do 20 minutes a side or so. I like my beef rare to med rare.

So, I'm eating some of that I froze a week or so ago. Yummy!

Tonight is homemade chili. I spent many years trying out recipes until I came up with the one I like. Not to pat myself on the back, but I LOVE  Love  my chili!!!!!! We are also having cornbread! OMG a butter day!!!!!!  crying  giggle

UYC, I will try the Chuck steak. Choice is definitely the grade to buy, don't buy select!!!!!!

Hmmm...this thread is making me hungry!  LOL  Shouldn't read it since I am on a diet, but hey, needed ideas for dinners!  LOL  smiley

Tonight's entree is perogies, done with Bermuda onions, and homemade bacon bits.  Dessert is a lovely coffee I got from Starbucks the other night and low-fat chocolate cupcakes.

Tomorrow is my absolute favourite - Sausage Rigatoni with a spinach salad!!  Yummm...  *drool*

You guys with all the fresh meals are making me jealous! I'm eating leftovers for the next two days cause I'm at work from 0730 to 1930 crying Kinda hard to cook fresh on that schedule.....

Tonight is baked chicken... easiest recipe that I have and comes out perfect everytime!!  I use either leg quarters or split breasts, season well and bake at 375 uncovered on a cookie sheet for 1 to 1 1/2 hours... comes out crispy on the outside and juicy in the middle!!  For sides, I think I will do steamed broccoli and red potatoes!!
