Tonight is healthy buffalo chicken breasts with healthy blue cheese dipping sauce.  I think I'll have mine as a large salad, DH will probably stick to a side salad with carrot sticks on the side. 
Recipes are in "Eating for Life" by Bill Phillips, page 150 (I think).  The recipe is for a sandwich, but we skip the bread and eat it on our plate.  Your local library probably has this book.

You are very sweet! Not sure if I'm up to goddess status. I actually really like cooking, ah who am I kidding I like eating! giggle
This whole cooking thing has taken a lot of practice and many nights of "this is gross we're not eating this!" We have a rule now, you don't have to eat what's on your plate however you must try it. Oh and if you chose not to eat it you will wait to eat until breakfast....(they usually choose to eat giggle)

Subway the saviour of the soccer mom! Could be worse you could have chosen Mc Raunchy Ron's. Have fun at soccer practice (I'm very jealous that you actually have grass to run on! Our is buried under 3 feet of snow, but it's warm today 0c kinda getting all soggy and what not out there! YEAH!!)

Okay I found this recipe for veggie burgers my good friend at work made them (she let me try a bite of hers) and they were so delicious with a bit of goats cheese on top..mmm. mmm, good! I'm going to try to make them tonight!

1 Tbs finely grated raw beet
1/2 cup cooked oats (quick or regular rolled oats)
1 cup uncooked oats (quick or regular rolled oats)
1/2 cup walnuts, coarsely ground
1/4 cup almonds, coarsely ground
2 Tbs sesame seeds
1 Tbs Vegix seasoning or instant vegetable broth
1/4 cup green pepper, minced
1/4 cup celery, minced
1/4 cup onion, minced
1 tsp dried basil
1/4 tsp dried thyme
1/4 tsp dried thyme
1/4 tsp ground sage
1/4 tsp mustard powder
2 Tbs soy sauce
1 Tbs nutritional yeast flakes (optional)
Mix all ingredients together well. Form into patties and gill until cooked through. Serve on whole wheat rolls with tomato slices and your favorite condiments.

Hey ladies...i love cooking. I work full time so i do a lot of crock pot cooking so if you ever need any recipes, let me know. I used to shop at Whole foods for organics, but I have found that the Kroger's by me is starting carry a huge selection of organics and often at much cheaper prices or if not, at least i get to use coupons for other things which makes up the difference. I love to bake too and could always use some yummy cookie recipes.

Tonight for dinner is easy...just broiled steaks and hand mashed potato's. I have also got to make a birthday cake for my finace.

Oh boy, fried chicken!!  YUMMY!!!   

Last night, I cooked Red Beans and Rice... It was not wonderful and I cooked a huge pot so we will have left overs for awhile   crying    It might be good with that fried chicken... what time should I be there??

Justine.... I am always looking for simple crock pot recipes.  Right now I have boneless pork & boneless, skinless chicken thighs at home to use.  Any suggestions?

Here is my easiest one for boneless pork: just cut up an onion and a few potato's. Put that and the pork into a crock pot. Put 1 pack dry french onion soup mix in as seasoning(sometimes i add a lil more pepper and my own fave seasonings). Add about a cup of chicken stock. I usually set it to cook for 6 hours on low and then my pot will go to a "keep warm" stage until i get home (so about 3 more hours). If you are home or don't have a timer on your pot, I wouldn't cook it much longer than 7-8 hours on low.

This one is basic, simple, and what i call throw and go...throw it into the pot and go. Its already got a meat and a veggie but if you want something additional, i would do something green...like peas or broc. I like to make this when i don't have time to think about what to make or to plan a weekly menu.

Hope if you try it it comes out good so i dont look like a dork! It should. Let me know.

Sorry Countess I'm a no seafood chica, but i don't know that cooking fish in a slow cooker would work that well. A good book is the Fix it & forget it, i will look in mine and see if there are any recipes in there and get back to you.

Countess! They were the best veggie burgers I ever had! So easy and so mmm mm good! I cooked them on the barbie and my kids ate them no problem even my husband a born and bred meat and potatoes man (boy he didn't know what he was in for when he married me eh?) Really enjoyed them and said he would eat them again!

However, tonight I'm giving in a letting him have the red meat hamburgers with fresh cut fries with olive oil baked in the oven!

If you try them let me know how it turns out!

Note if you cook them on the barbeque oil it first.

Here's another easy crockpot recipe:  Cut up ribs into 2-rib pieces (any kind of ribs you like).  Layer in the crockpot and cover with a bottle of barbeque sauce (Sweet Baby Rays is our favorite).  Let it cook on low for 6 - 8 hours.  They will fall off the bone!

Tonight is Taco Soup (which is really a chili  giggle ).  It's WW friendly and Ren will eat it too!

Brown 1 lb ground beef (I use 93% )FF with one small onion, chopped.  Add 3 cans of red kidney beans, 1 lg can of tomato sauce, 1 lg can of crushed tomatoes, 1 taco seasoning envelope, and 1 Ranch dressing mix envelope (dry).  Mix it all together and either simmer on the stove or throw it all in the crockpot for a few hours.  Original recipe calls for a can of corn but I leave that on the side and add it to my bowl since Ren doesn't like corn. 
Serve with shredded cheese and sour cream if desired.

ooh I need more crockpot recipes!

tonight we had crockpot again....some beef ribs with a weird barbecue sauce. First time i tried this recipe! The sauce even had instant coffee in it...it turned out okay.

NoPinkHugs: When we first got married we were very poor, so my grocery budget was $50/ week.(we've only been married 5 years so it wasn't *that* long ago)
UYC is right - whole chickens, and cut up chicken thighs were the beast deals!! I would make homemade chicken noodle soup with a whole chicken, and it lasted for days! For the thighs, I would roast them the first night and chop up the leftovers for chicken tacos the second night.

The chicken soup is the easiest thing in the world - just fill a big pot of water, throw the whole chicken in, and simmer for like three hours. Once it's done, scoop it out. It falls apart and you can pick out the skin and bones no problem....then just throw some carrots and celery in the water, boil some egg noodles in there, and add the chicken pieces back in....stupid easy, cheap, tasty, and lasts for days.

smiley and of course there's the even CHEAPER standby, tuna noodle salad. smiley can of tuna, peas, a little onion, cooked spiral pasta...add mayo and voila!

you have an entire week's menu right there for like $25.  My main seasonings that first couple of years was LOTS of salt and pepper. ha ha
