This looked good. It's an easy and quick meal from Kraft that I got in their newsletter today.
I hate quick white rice, so I'd do brown rice to make this more nutritious. You can substitute chicken breasts too--probably any chicken pieces you like would work.
The red and yellow bell peppers can be expensive, but you could substitute I'm sure. I buy a package of red, green & yellow peppers--one of each in the package--that is pretty reasonable.
