Hi everyone! O.K. I have a billion pickling cucumbers on my vines and need to make pickles. Years ago I found a wonderful German Crock pickle recipe which I have lost, but I remember you made a brine, put the cucs in jars with garlic, hot peppers, dill? and brine and capped them and inverted the jars for 10 days and the refridgerated them. OMG, the best New York dills in the world (from what my sisters friend from New York said). Does anyone know of this recipe? Also, I remember my Great Grandmother, who was from Finland made the BEST hot (spicy) dills, do any of you know a good Finnish Dill pickle recipe? Thanks!!!  Love

I FOUND IT!!!!!!!

It is titled Kosher Jewish Pickles, and I don't use ice, corriander or peppercorns (I use 1 cayenne pepper), I also keep out for 10 days and invert my jars (oh and I use wide mouth canning jars) into a glass casserole dish and fill with extra brine to keep jars from leaking. BUT, it is the same overall recipe!!!!!! YAY!!!!!!!

I just about choked when I read your post! I just finished making 30 jars of dill pickles this morning! Mines an old Fanny Farmer recipe...very basic, but very good! I usually give away over half of what I make every year! Simple recipe:

pack your jars with garlic (lots of it) and dill (lots of this too). Pour boiling brine overtop, close lids and bath the jars that don't seal....most of them seal I only had four that didn't seal this year!

Brine: 4 cups vinegar, 8 cups water, and 3/4cup pickling salts.

Hi Sassy! That's too funny! I LOVE homemade pickles!!!!!

Oh and Sassy, add this disclaimer: According to the USDA, EVERYTHING must be water bath canned!!!!!

I never EVER water bath my jam and they have ALWAYS sealed! I use to not water bath my pickles, but got worried that I would kill someone! LOL

I try to avoid adding vinegar to my pickles. I try to ferment my own, they come out more natural tasting (to me)!

Sassy, did you grow you own pickles? What else do you can?

My favorite is fried dill pickles!!  Slice them up, roll them in corn meal and then fry in veggie oil...  Delicious!!

Sounds interesting TUP....I may try that.

WWIT, I did not grow my own cucumbers this year..I never seem to have any luck with them...I buy them from the Amish at our weekly farmers market. My garden is too full of tomatoes and tomatillos.
I will be canning tomatoes and spicy green enchilada sauce later this season. I'm sure I sent you the web site for the green sauce..if you need it I'll re-post it!
Oh and as for the USDA disclaimer...it's a darn good thing I live north of the boarder :rasp: :laugh3: :rasp: :1lmao:

I use to can anything and everything when I lived in the country, but now not so much. This summer I've canned Bing cherries, pickles, froze green and yellow beans and just went blueberry picking today. I picked 10 pounds and it was only $8.00!!!!! YAY!!!!! I plan on freezing them. In fact we drove everywhere today trying to find ripe blueberries and ended up at a blueberry farm right by my old house in the country! The farm also backs up to my friend Amie's property. She died of breast cancer at 44, I had to go stare at her property for a few minutes and then compose myself. Good day though! My guess is Amie guided us there! Thanks Amie!!!!!  Love

I'm not sure what else I will put up this year. Oh Sassy, I'll look for that link, I LOVE Salsa Verde!!!!!!!!

AAAAAAAAAAnnnnnnnnddddd, I forgot. While I was picking blueberries, my boyfriend went up the Columbia river about 50 miles and bought a Steelhead and a Chinook Salmon from an American Indian vender. Both were about 6 pounds and together cost $50.00. Not too shabby!!!!!!! I LOVE directly supporting the American Indians, I would rather buy salmon than go to a Casino and give 75% of that money to the mob! (Who knows if that's true), but I won't support gambling, I think it's a bad deal.  :shemademe:

Anyway, we ended up all together with 10 meals for 2. YAY! We froze the fish steaks in water.  That's only $2.50 per steak!!!!!  :jmp4joy:

Wow..sounds like you had a fun busy day and full of good deals too! I thought when I bought 13 pounds of bing cherries for $23.00 I was doing well...but you and the blueberries have got me beat hands down!
