Made this for lunch yesterday.  It's very good and easy to make.

Ginger

White Chicken Chili
from: Taste of Home Magazine, (I think, someone gave me the recipe)

1 medium onion, chopped
2 cloves garlic, minced
1 Tablespoon olive oil
4 cooked, boneless skinless chicken breast halves, chopped
2 cans (14 oz. each) chicken broth
1 can (4 oz.) green chilies
2 teaspoon ground cumin
2 teaspoon dried oregano
1 ½ teaspoon cayenne pepper
3 cans (14.5 oz. each) great northern beans, drained
1 cup (4 oz.) shredded Monterey Jack cheese
chopped jalapeno pepper, optional

In a large saucepan over medium heat, cook the onions and garlic in oil for 10 minutes or until onions are tender.  Add chicken, chicken broth, green chilies, cumin, oregano and cayenne pepper; bring to a boil.

Reduce heat to low.  With a potato masher, mash one can of beans until smooth.  Add to saucepan.  Add remaining beans to saucepan.  Simmer for 20-30 minutes or until heated thoroughly.  Top each serving with cheese and jalapeno pepper if desired.

Yield: 2 ½ quarts.

Ginger- Thank you so much for posting this recipe. A co-worker brought this into work once for a potluck and kept forgetting to bring me the recipe. I love this stuff. He served it with lime flavored tortilla chips...YUMMY! Now my mouth is watering....ha.

My SIL made something similar at Christmas.

My friend brought some over last night for dinner.  Her recipe (which I have) has whipping cream in it.

Both are Y-U-M-M-Y!!!!!!

I've made a couple of batches of this and it is so good.  Thank you for the recipe.  It unclogs my head which right now is a wonderful feeling.

Great Northern Beans are a variety of white bean.  Any white bean would work.  I even ran out of white beans and used some other beans to make up the difference.  Tasted fine.
